Eventide Oyster Co. Portland, ME

Starting with a grilled Rhode Island squid salad, followed by a dozen oysters from Maine (winter point, pine point, pemaquid, north haven, john's river and shallow bay); lightly cured artic char (fried bagel, creme fraiche, red onion).
