After touring the winery at Noilly Prat ( and tasting their three vermouths -dry, red and ambre) I drove to the small village of Floure, outside of Carcassonne, to the Château de Floure. For dinner on the terrace, I ordered a 2008 Clos Canos rose from the nearby Corbieres. The amuse-bouche was eggplant with smoked duck. For the meal, I had a ballottine of chicken with vegetables, followed by thinly sliced duck with mashed potatoes and for the last course, a selection of cheeses. The setting was beautiful, the food was pretty good and the service was attentive. All in all, a great way to start a visit to southern France.
